Delicious vegan, gluten free corn bread recipe! Can be made into bread or muffins!

Ingredients
1 1/2 cup non-dairy "butter" milk (soy milk if possible, mixed with 2 tsp vinegar)
2 vegan eggs (2 T Bob's Red Mill egg replace mixed with 6 T water)
1/3 cup oil
2 cup cornmeal (245 to 280 g)
1 cup flour blend (53 g brown rice, 60 g sorghum, 32 g potato starch, 32 g arrowroot; Total-177 g)
1/4 cup sugar (or less)
3 tsp baking powder
1/2 tsp salt
Recipe Steps
Mix all wet ingredients together.
Mix all dry ingredients together.
Stir wet and dry ingredients together.
Pour batter into 8x4 inch loaf pan. Or portion batter into 12 muffin cups.
Bake at 350 degrees for 25-30 minutes for muffins or 1 hour for bread.
